Tonight, I made lasagna for the first time. I added too much ricotta to the whole thing, and my meat sauce wasn’t nearly saucy enough. Also, I need to back off the thyme, basil, and oregano, and remember not to fill the dish to the top, or it’ll end up an inch too tall with crispy lasagna noodles on top. On a scale from one to ten (ten being spectacular), this one’s about a two. But at least I know what I did wrong, so in a year or two, when I try this again, I’ll do better.

a year or two . . . hahaha. it looks good to me. i’m making my first pot roast overnight for tomorrow. and i’ve already screwed it up in less than 3 hours. so don’t feel bad.

Well, it looks good, anyway.
I noticed you are listening to DCB Remedy. I am, too. I am really caught by the song, “Never Let Go.” It has brought to my mind all of the times that I have let go of God in little and big ways. Little, like just getting busy and blowing Him off, and big, like willfully choosing to sin.
Nevertheless, as often as I let go of Him, He will not let go of me.
What an amazing God.
I’m posting about that, I think, on Thursday of next week.

Josh- I’ve never tried pot roast. But when I was in Texas, I picked up a huge brisket from HEB (a grocery chain) which is already cooked and sliced. It takes the effort out of everything, but it’s better than my parents’ brisket, and they smoke theirs themselves. That’s the closest thing to big and beefy I’m going to get to until June, when I get my own apartment.
Art- It’s a great album. That song reminds me of New Orleans, and in concert, Crowder said if any song was written for us, that was it (even though, from what I imagine, it really was after their pastor’s death). Have you heard Shane & Shane’s Pages album? Just as good, if not better.

I like lasagna…. yummy.
I always put a layer of sauce on top and below each layer of noodles….also, 16oz of ricotta with 2 eggs in it seems to work well. Top with cheese, not noodles. Food for thought.

Mmmm! Looks good to me.
That would have gone well with my salad tonight. I made my own knock-off of Fido’s Liberal Salad — mixed greens, fruit (strawberries) and nuts (almonds) along with some spiced feta (with garlic, basil, ect) and topped with a Greek Vinegrette dressing. Good stuff!
